Hope's Pineapple Roll Divine
Pineapple cake Recipe Ingredients:
  • 1 can (20 ounces) crushed pineapple
  • 1 cup packed light brown sugar
  • 1/3 cup flaked coconut
  • 1/4 cup chopped nuts
  • 1 1/2 teaspoons vanilla extract
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 4 large eggs
  • 2/3 cup sugar
  • 3/4 bup all-purpose flour
  • 1 teaspoon double-acting baking powder
  • 1/2 teaspoon salt
  • Powdered sugar
  • Topping, see directions
Pineapple Cake Recipe Instructions :
Drain pineapple well; reserve 3/4 cup juice and 1/2 cup crushed pineapple for topping. Combine in a large mixing bowl the drained pineapple, brown sugar, coconut, nuts (your choice), 1 teaspoon vanilla extract, cinnamon and cloves. Mix well and spread over the bottom of an ungreased 15 × 10 × 1-inch jelly-roll pan. Set aside. Place egg whites in a bowl and beat until soft peaks form. Gradually add 1/3 cup sugar and beat until stiff but not dry. Set aside. In a separate bowl, beat egg yolks until thick and pale yellow; gradually beat in remaining 1/3 cup sugar and 1/2 teaspoon vanilla. Gently fold egg whites into egg yolk mixture. Sift flour with baking powder and salt. Gently fold flour mixture into egg mixture. Spread batter evenly over pineapple mixture in pan. Bake in preheated 375° oven for 20-25 minutes. Carefully loosen cake around edges. Invert cake onto kitchen towel which has been sprinkled with powdered sugar. Let stand 3-4 minutes then roll up, jelly-roll fashion. Cool cake then garnish with pineapple topping.

Topping: Combine 3/4 cup reserved pineapple juice, 2 tablespoons sugar and 1 tablespoon cornstarch in saucepan; blend well. Cook until thick and clear. Stir in reserved pineapple; cool. Spoon on cake roll and sprinkle with toasted coconut

  • 1 can crushed pineapple
  • 1 large cool whip
PINEAPPLE CAKE RECIPE INSTRUCTIONS
Bake cake according to directions on the package. Poke holes in cake and add Eagle brand sweetened condensed milk, then crushed pineapple and cool whip.

PINEAPPLE CAKE RECIPE INGREDIENTS
  • 2 c. flour
  • 2 c. sugar
  • 2 eggs
  • pinch salt
  • 2 tsp. baking soda
  • 1 1/2 c. pecans
  • 20 oz. can crushed pineapple (include juice)
PINEAPPLE CAKE RECIPE INSTRUCTIONS
Mix ingredients well and pour into long pan (9 x 13).Bake at 350 degrees for 40 minutes.

FROSTING:
  • 1 8 oz pkg. Philadelphia cream cheese
  • 1/2 stick butter
  • 1 tsp. vanilla
  • 2 cups powdered sugar
Mix well and pour over warm pineapple cake...enjoy it !

PINEAPPLE CAKE RECIPE INGREDIENTS
Cake:
  • 2 cups all-purpose flour
  • 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 3/4 cups white sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1 cup flaked coconut
  • 1 cup chopped walnuts
  • 1 (8 ounce) can crushed pineapple, drained
Frosting:
  • 1 (8 ounce) package cream cheese
  • 1/4 cup butter, softened
  • 2 cups confectioners' sugar
  • few drops vanilla extract or rum

PINEAPPLE CAKE RECIPE INSTRUCTIONS
This recipe is wholesome and easy (it only takes 30 minutes to prepare and 45 to bake). The carrots and the pineapple work together to keep the cake moist.
Preheat oven to 350°F. Remove butter and cream cheese from refrigerator and allow to warm up to room temperature 30 minutes in advance.
Wash, peel, and grate the carrots (it helps to use the fine grating disc of a food processor).
Sift together flour, baking soda, baking powder and salt. Stir in cinnamon (you don't want to get the cinnamon in the sifter!)

Beat the eggs, add the sugar. Add the flour mixture to the egg mixture gradually. Add oil and vanilla. Beat for 1 minute at medium speed of electric mixer.
Using a wooden spoon (or other large spoon) stir in the grated carrots, coconut, crushed pineapple and finally the walnuts. Mix well and turn out into a buttered and floured 9x13 inch pan.Bake at 350°F for approximately 45 minutes or until cake is no longer moist in center and begins to pull away from edges of pan.

To prepare frosting, beat cream cheese with butter and a few drops vanilla extract or rum; when completely mixed, beat in the confectioners' sugar until the frosting is a spreadable consistency.
Frost cake while still slightly warm. The pineapple cake recipe is ready to serve. Great taste. Enjoy the feasts and party !

DOUBLE LAYER PINEAPPLE UPSIDE DOWN CAKE

PINEAPPLE CAKE RECIPE INGREDIENTS
  • 1 large can of sliced pineapples, drained
  • 1 large jar of Maraschino Cherries
  • 1 box of Pineapple Supreme Cake Mix
  • 4-5 large eggs
  • 1/3 vegetable oil
  • 1-1/3 pineapple juice
  • 2 cups firmly packed brown sugar
  • 1 cup butter
  • 1 8 oz can of vanilla frosting
  • 1 small can crushed pineapples, drained

PINEAPPLE CAKE RECIPE INSTRUCTIONS
Topping:

Place pineapple slices at the bottom of two well oiled baking pans. Place whole cherries in the center of each pineapple slice and in between each of the slices. Melt butter in medium sauce pan. Add brown sugar and cook until bubbling.

Pour the brown sugar mix over the pineapples and cherries in each pan, up to two inches deep.

Cake:

Blend cake mix, pineapple juice, eggs, vegetable oil together until smooth. Pour equal amounts of cake mix over brown sugar and pineapple mixture into each pan. Bake on center rack of oven under 350°F for 30 minutes or until center is done.

Allow cakes to cool for 15 minutes. Remove from pans on to plates and allow to cool for another two hours.

Frosting:

Drain the can of pineapples so that is no liquid is left. Mix the pineapples and frosting together.

Putting it together: Once the cakes have cooled for two hours, place one on top of the others with pineapple side up. Frost the sides of the cake.

Leave the top and center of the cakes unfrosted. Place frosted cakes in the refrigerator until ready to serve...enjoy the pineapple cake !

PINEAPPLE BANANA CAKE

Pineapple Cake Recipe INGREDIENTS
  • 3 cups flour
  • 2 cups sugar
  • 3 eggs
  • 1 1/2 cups vegetable oil
  • 1 cup crushed pistachios, Macadamia, or walnuts
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 (8 oz) can crushed pineapple
  • 1 tsp. cinnamon
  • 1 tsp. pure vanilla
  • 2 cups mashed bananas
Pineapple Cake Recipe INSTRUCTIONS
Preheat oven to 350°F. Grease a tube or Bundt pan or spray well with non-stick spray. Dust lightly with flour, tapping out excess.

In a large bowl, whisk together dry ingredients (flour, sugar, baking soda, salt, cinnamon) until no streaks remain.
Make a well in the center and add eggs, pineapple, nuts, oil, vanilla and bananas.
Stir batter (do not beat), mixing well. Some lumps can remain in batter; do not overmix.
Bake cake in a preheated 350°F oven until a toothpick inserted in center comes out clean (about 75 minutes).
Cool on wire rack for 5 minutes before removing cake from pan.
